I love spending time making food from scratch. I don’t usually see it as a chore as I know some do. For me, it makes the finished item more rewarding. However, there are times when I enjoy the convenience of something pre-made. This weekend has been a busy one, so the convenience of ready-made pizza dough from Northern Dough Co was very welcome.

Instead of pizza, I wanted to make calzone for a change.

Calzone is much like a pizza, but it has been folded in half and resembles a pasty in appearance, and you generally serve the sauce on the side. It is similar to a Stromboli, however that usually has the sauce in and is rolled rather than folded. 

Of course, if you want to make your own pizza dough, then go right ahead and use half batch of my recipe here. 

QUICK N EASY CALZONE

INGREDIENTS
  • 1 packet Frozen Pizza Dough 440g
  • 1 tablespoon Butter
  • ½ medium Onion diced
  • 250 grams Good Quality Pork Sausages
  • 1 teaspoon Italian Seasoning
  • 200 grams Ricotta
  • 25 grams Grated Parmesan
  • 85 grams Grated Mozzarella
  • 1 large Free Range Egg
  • Salt and Ground Black Pepper for seasoning
  • Marinara Sauce for serving
INSTRUCTIONS
  1. Get the pizza dough out of the freezer and place on the counter top to thaw for 4 hours, or overnight in the fridge

  2. Melt a tablespoon of butter and add in the diced onion, and fry until softened

  3. Take the sausage meat of the skins and add to the onions. Use a wooden spoon or spatula to break up the sausage as it browns. Add in the Italian seasoning, and put to one side to cool slightly

  4. In a separate bowl, combine the parmesan, mozzarella, and ricotta with the egg. Season with a little salt and pepper. Stir in the cooled sausage meat

  5. Pre-heat the oven to 220°C / 425°F

  6. Take the two dough balls and cut each one in half. Shape the dough back into a rough ball and roll out into a thin circle, about 15cm / 6"

  7. Place a quarter of the filling on one half of the dough circle. Fold over the dough, and press down the edges with a fork. Place on a baking sheet and repeat with the rest of the dough and filling

  8. Brush the top of the calzone with some beaten egg, then bake for 13-15 minutes

  9. As the calzone bake, heat up some marinara sauce and serve along side the calzone
