Chicken and Chorizo Hash Bake
There appears to be a welcome respite in the seemingly relentless heat of summer, so I took the opportunity to put the oven on. I haven’t really felt like cooking much. It’s hard to stand over a stove when your kitchen is 30°C.
It’s been a long old week, and though I wanted something hot, I also wanted something with maximum comfort and minimum effort. A tray bake is always the answer. This dish is made extra simple by using pre-prepped ingredients. I love cooking from scratch, but there are some days where I just want to cut corners. I don’t feel guilty about it, and neither should you.
This recipe uses frozen hash brown patties, but if you want to go to the trouble of making your own hash, go to town. If you want to use ready diced onion, and pre-grated cheese too, you won’t get any judgement from me. You can use whatever cheese you have, or whatever catches your eye.
Tender chicken breasts pieces with spicy chorizo and onion, on a bed of hash browns and topped with cheese
- 750 grams Frozen Hash Browns
- 225 grams Chorizo Sausage
- 200 grams Diced Onion
- 400 grams Diced Chicken Breast
- 400 grams Grated Cheese

Pre-heat the oven to 190°C / 375°F

In a large roasting tin, place the frozen hash browns in a single layer

Slice the chorizo sausage and sprinkle evenly over the hash browns. Repeat with the onions, then the diced chicken breast, and finally the cheese

Bake in the oven for 25-30 minutes, until the chicken is cooked through and the cheese is melted and browned
