Banana, Oat & Raisin Muffins
While packing my lunch bag for me, dear half found some overly ripe bananas and was about to throw them away when I stopped him. I like bananas when they are very ripe, but even for me, these were too ripe to eat for lunch. They are, however, perfect for banana muffins. Throw in some oats for texture, and some raisins for natural sweetness so you can keep the sugar levels low, and you have a tasty muffin that is almost good for you.
Great for lunch boxes or for breakfast on the run, these are tasty and flavourful. I even added in a small handful of crushed pecans, but only because I had a few left. I haven’t included them on the ingredients, but if you happen to have some in your cupboard, then go for it.
Banana Oat and Raisin Muffins

Ingredients
- 100g Raisins
- 200g Plain Flour
- 2 teaspoons Baking Powder
- 1 teaspoon Bicarbonate of Soda
- ½ teaspoon Salt
- 80g Oats
- 100g Caster Sugar
- 250g Ripe Bananas (about 3 small bananas)
- 1 Large Free-range Egg
- 175ml Semi Skimmed Milk
- 75ml Vegetable Oil
- 1 teaspoon Vanilla Extract
Directions
1. | Pre-heat the oven to Gas Mark 6 / 200°C / 400°F and line a 12 hole muffin pan with cases |
2. | Weigh out the raisins and pour over just enough hot water to cover. Allow to soak for 10 minutes to plump the raisins |
3. | In a large mixing bowl, sift together the flour, baking powder, bicarbonate of soda and salt. Stir in the sugar and oats |
4. | With a slotted spoon, drain the raisins and add to the dry ingredients |
5. | In another bowl, add the egg, milk, mashed banana, vanilla and vegetable oil and mix together |
6. | Pour the wet ingredients over the dry and mix with a wooden spoon until just combined |
7. | Spoon the mixture evenly between the 12 muffins cases and bake for 20 minutes turning the pan half way through cooking |
8. | Remove from the pan immediately and place on a rack to fully cool |
Am I being blind or does it not say where to add the sugar and oats??
