Cornbread Stuffing

Ingredients

  • 300g Cornbread (broken into large crumbs)
  • 500g Sausage Meat
  • 25g Unsalted Butter
  • 1 Large Onion (finely diced)
  • 1 Medium Dessert Apple (finely diced)
  • 100g Cooked Chestnuts (finely chopped)
  • 2 sprigs Sage (finely chopped)
  • 2 sprigs Thyme (leaves only)
  • Salt and Pepper

Directions

1. Fry the onions in the butter until softened. Add the apple, and cook for a further few minutes then set aside to cool
2. In a large bowl, add the cornbread crumbs, chestnuts, sausage meat, herbs
3. Add in the softened onion and apple. Mix all the ingredients together thoroughly
4. Press into a loaf tin and bake for 30-40 minutes
