Chicken with Lemon Couscous and Courgettes

Serves 2

Ingredients

  • 2 Chicken Breasts
  • 2 Courgettes
  • 150g Cous cous
  • 350ml Vegetable Stock
  • pinch Salt
  • 1 Lemon

Directions

1. Place the chicken breasts in a freezer bag to prevent and chicken flying around kitchen. Bash with a rolling pin until its an even thickness of about 1cm and season
2. Chop the ends off the courgettes, and using a peeler, cut it into thin strips
3. Heat a grill pan and a small frying pan, each with a little oil
4. Place the cous cous in a bowl, and pour the hot stock over the top. Cover with a plate or lid, and leave to rehydrate
5. Add the chicken to the grill pan, and the courgette to the frying pan
6. Fry the courgette until it starts to crisp and colour, then add into the cous cous
7. Turn the chicken over after a few minutes and brown on the other side
8. Cut the lemon in half, and squeeze half over the chicken in the pan, and the other half over the cous cous. Fork through then serve
