Vanilla and Ginger Cupcakes with Chocolate Lime Frosting
Serves | 12-18 |
Ingredients
Vanilla & Ginger Cupcake
- 110g Unsalted Butter
- 225g Caster Sugar
- 2 Large Free-range Eggs
- 125g Self-Raising Flour
- 125g Plain Flour
- 120ml Milk
- 1 teaspoon Vanilla Extract
- 2 Ginger Stems in Syrup (grated, and some of the syrup)
Chocolate Lime Frosting
- 60g Unsalted Butter
- 85g Marscapone
- 115g Dark Chocolate
- 250g Icing Sugar
- Zest & Juice of 1 whole Lime (use less for a milder flavour)
Directions
1. | Pre-heat oven to Gas Mark 4 / 180°C / 350°F |
2. | Put all cupcake ingredients in a mixing bowl and blend until smooth |
3. | Divide mixture between cases, and bake for 25 minutes |
4. | Once they are cooked, leave on a cooling rack until fully cooled |
5. | For the frosting, once again bung all the ingredients in a bowl, and blend until smooth |
6. | Pipe your frosting onto your cooled cupcakes |
