Quorn Mince Bolognese

Serves 4

Ingredients

  • 1 Large Onion (finely chopped)
  • 1 clove Garlic (finely chopped)
  • 2 heaped tablespoons Tomato Puree
  • 500g Quorn Mince
  • 2 400g Tin Chopped Tomatoes
  • 1 teaspoon Dried Mixed Herbs
  • 400g Dried Pasta
  • 2 Vegetable Stock Cube
  • 2 Carrots (peeled and thinly sliced)
  • 125g Frozen Peas

Directions

1. Fill and boil the kettle
2. Start water boiling for the pasta. Add a tablespoon of olive oil and a good pinch of salt to the water
3. Add the onions to a large saute pan and cook until soft, then add the garlic and stir well
4. Mix in the carrots and Quorn
5. Add 250ml of boiling kettle water to the stock cubes and stir well
6. Add the stock to the quorn mixture, along with the tomato puree, tinned tomato, frozen peas and mixed herbs. Stir thoroughly and leave to simmer.
7. Add your pasta to the boiling pan water and cook as per packet instructions.
8. Season the sauce to taste with salt and pepper, then serve.

Note

1) Herbs are really easy to grow and leave in the garden. Use your own herbs for that fresh taste
2) Add some chopped up bacon to cook before the mince (only do this if you are only serving meateaters)
3) Instead of pasta, boil some potatoes and make a cheesy mash potato topping for a cottage pie
4) Use passata or a store bought sauce instead of the tinned tomatoes. Sundried tomato paste also adds a little something
5) Fresh or home-made pasta is a great option
6) switch out the peas and carrots for sweetcorn and broccoli
7) Instead of pasta bake some potatoes
