Southern-style Buttermilk Biscuits

Ingredients

  • 300g Plain Flour
  • ½ teaspoon Bicarbonate of Soda
  • 1 tablespoon Baking Powder
  • 1 teaspoon Salt
  • 100g Unsalted Butter (cold and cubed)
  • 287ml Buttermilk

Directions

1. Pre-heat the oven to Gas Mark 7 / 220°C / 425°F. Place the cubed butter in the freezer for five minutes.
2. Sift the dry ingredients together in a bowl and stir to mix
3. Add in the cubed butter and rub together until course breadcrumbs. You don't want to over mix at this stage
4. Add in the buttermilk and mix gently until just combined. You should have a very sticky dough
5. Turn out onto a heavily floured surface, and sprinkle flour over the top. Using floured hands, gently pat - don't roll - the mixture until it is about ½ inch/1½ cm thick, then fold in half
6. Pat down to ½ inch/1½ cm tick again, then fold. Repeat this a further 3 times.
7. The final time, gently press dough to 1"/2½cm thick, then using a floured round cutter, cut out circles
8. Place on a buttered baking sheet and bake for 12 minutes until risen and fluffy
