Smoked Mackeral and Potato Salad

Serves 4

Ingredients

  • 750g Small New Potatoes
  • Smoked Mackeral (skinned and flaked)
  • 300ml Creme Fraiche
  • 2 tablespoons Lemon Juice
  • 1 tablespoon Lemon Zest
  • 1 bunch Spring Onions (finely sliced)
  • Baby Spinach

Directions

1. Add potatoes to boiling salted water and cook until fork tender
2. While the potatoes are cooking, add the creme fraiche to a large mixing bowl, and stir in the lemon juice and zest
3. Add in the sliced spring onions
4. On a serving plate, lay a bed of spinach
5. When the potatoes are cooked, drain and add to the creme fraiche mixture along with the mackerel, and gently stir until everything is coated
6. Spoon the potato salad onto the bed of spinach and serve while still warm
