Smoked Mackeral and Potato Salad
Smoked Mackeral and Potato Salad
Serves | 4 |
Ingredients
- 750g Small New Potatoes
- Smoked Mackeral (skinned and flaked)
- 300ml Creme Fraiche
- 2 tablespoons Lemon Juice
- 1 tablespoon Lemon Zest
- 1 bunch Spring Onions (finely sliced)
- Baby Spinach
Directions
1. | Add potatoes to boiling salted water and cook until fork tender |
2. | While the potatoes are cooking, add the creme fraiche to a large mixing bowl, and stir in the lemon juice and zest |
3. | Add in the sliced spring onions |
4. | On a serving plate, lay a bed of spinach |
5. | When the potatoes are cooked, drain and add to the creme fraiche mixture along with the mackerel, and gently stir until everything is coated |
6. | Spoon the potato salad onto the bed of spinach and serve while still warm |
