Royal Icing (with dried albumen)

Ingredients

  • 17g Dried Albumen
  • 100ml Water
  • 500g Icing Sugar

Directions

1. Add the albumen to the water and mix until combined and lump free
2. Add half the icing sugar and mix on a low speed until well mixed
3. Add the rest of the icing sugar gradually and continue to beat until stiff
