Potato and Courgette Fritters

Serves 9-10

Ingredients

  • 340g Potato (grated)
  • 340g Courgette (grated)
  • 1 teaspoon Salt
  • 40g Plain Flour
  • 1 teaspoon Garlic Powder
  • 1 Large Free-range Egg (beaten)
  • 30g Grated Parmesan

Directions

1. Put the grated potato and courgette into a colander, sprinkle over the salt, and toss
2. Allow excess liquid to drain away for about 10 minutes
3. Tip the mixture into a clean teatowel, and squeeze the remaining excess water
4. Add the grated veg to a bowl and mix in the cheese, flour and garlic powder
5. Add the beaten egg and mix until no dry ingredients show
6. Heat a non-stick saucepan with a little oil. Spoon out some of the mixture, and between floured hands, pat it into a flat patty.
7. Place the fritter into the pan and allow it to cook for a few minutes until the bottom is crisp and golden
8. Flip over and press down with a spatula and cook until the other side is crisp
9. Keep the fritter warm while you cook the rest of the mixture
