Potato and Courgette Fritters
Potato and Courgette Fritters
Serves | 9-10 |
Ingredients
- 340g Potato (grated)
- 340g Courgette (grated)
- 1 teaspoon Salt
- 40g Plain Flour
- 1 teaspoon Garlic Powder
- 1 Large Free-range Egg (beaten)
- 30g Grated Parmesan
Directions
1. | Put the grated potato and courgette into a colander, sprinkle over the salt, and toss |
2. | Allow excess liquid to drain away for about 10 minutes |
3. | Tip the mixture into a clean teatowel, and squeeze the remaining excess water |
4. | Add the grated veg to a bowl and mix in the cheese, flour and garlic powder |
5. | Add the beaten egg and mix until no dry ingredients show |
6. | Heat a non-stick saucepan with a little oil. Spoon out some of the mixture, and between floured hands, pat it into a flat patty. |
7. | Place the fritter into the pan and allow it to cook for a few minutes until the bottom is crisp and golden |
8. | Flip over and press down with a spatula and cook until the other side is crisp |
9. | Keep the fritter warm while you cook the rest of the mixture |
