Peanut Pralines
Peanut Pralines
Ingredients
- 450g Caster Sugar
- ¾ teaspoon Bicarbonate of Soda
- 240ml Single Cream
- 15g Unsalted Butter
- 300g Salted Peanuts
Directions
1. | Line two baking trays with greaseproof paper |
2. | In a very large saucepan, mix together the bicarb and sugar. This mixture will grow at least three times its size while boiling so ensure your pot is large enough |
3. | Add the cream and place over a medium heat and cook, stirring gently with a long handled spoon, until golden and the temperature reaches 112°C / 235°F (soft ball stage). Be careful, as this mixture spits a bit |
4. | Once the temperature is reached, turn the heat down and add the butter and nuts. Mix gently until the butter is melted |
5. | Using a tablespoon, drop spoonfuls of the mixture on the baking tray, about 2" apart and allow to cool completely |
