Peanut Pralines

Ingredients

  • 450g Caster Sugar
  • ¾ teaspoon Bicarbonate of Soda
  • 240ml Single Cream
  • 15g Unsalted Butter
  • 300g Salted Peanuts

Directions

1. Line two baking trays with greaseproof paper
2. In a very large saucepan, mix together the bicarb and sugar. This mixture will grow at least three times its size while boiling so ensure your pot is large enough
3. Add the cream and place over a medium heat and cook, stirring gently with a long handled spoon, until golden and the temperature reaches 112°C / 235°F (soft ball stage). Be careful, as this mixture spits a bit
4. Once the temperature is reached, turn the heat down and add the butter and nuts. Mix gently until the butter is melted
5. Using a tablespoon, drop spoonfuls of the mixture on the baking tray, about 2" apart and allow to cool completely
