Peanut Butter Sugar Cookie

Ingredients

  • 110g Unsalted Butter
  • 140g Peanut Butter (smooth or crunchy)
  • 100g Light Brown Sugar
  • 100g Caster Sugar
  • 1 teaspoon Vanilla Extract
  • 1 Large Free-range Egg
  • 300g Plain Flour

Directions

1. Put the butter and sugars in a mixer and beat for several minutes until well combined
2. Add in the peanut butter and mix thoroughly
3. Lightly beat the egg with the vanilla and add to the mixture and beat well until thoroughly combined
4. Sift the flour and baking powder together than add to the mixture. Turn the dough out and wrap in cling film and chill for a few hours until firm
5. Pre-heat the oven to Gas Mark 4 / 180ºC / 350ºF
6. Roll out the dough on a lightly floured surface. Place the cut outs on a greased baking tray and bake for 14-16 minutes or however long it needs until the edges just start to colour
7. Allow to cool for a few minutes on the tray then transfer to a rack to cool fully
