Peanut Butter Sugar Cookie
Ingredients
- 110g Unsalted Butter
- 140g Peanut Butter (smooth or crunchy)
- 100g Light Brown Sugar
- 100g Caster Sugar
- 1 teaspoon Vanilla Extract
- 1 Large Free-range Egg
- 300g Plain Flour
Directions
1. | Put the butter and sugars in a mixer and beat for several minutes until well combined |
2. | Add in the peanut butter and mix thoroughly |
3. | Lightly beat the egg with the vanilla and add to the mixture and beat well until thoroughly combined |
4. | Sift the flour and baking powder together than add to the mixture. Turn the dough out and wrap in cling film and chill for a few hours until firm |
5. | Pre-heat the oven to Gas Mark 4 / 180ºC / 350ºF |
6. | Roll out the dough on a lightly floured surface. Place the cut outs on a greased baking tray and bake for 14-16 minutes or however long it needs until the edges just start to colour |
7. | Allow to cool for a few minutes on the tray then transfer to a rack to cool fully |
