Pan-fried Swordfish with a Parsley and Lemon sauce
Serves | 1 |
Ingredients
- 250g Fresh Swordfish
- 1 tablespoon Olive Oil
- 1 tablespoon Flat Leaf Parsley (finely chopped)
- Juice of ½ Lemon
- 15g Unsalted Butter
- Salt and Pepper to taste
Directions
1. | Heat the oil in a pan over a medium heat |
2. | Season the steak with salt and pepper, then place in the hot pan |
3. | Fry for about 4 minutes on each side, then place on a warmed plate |
4. | Pour away any remaining oil, then melt the butter in the pan |
5. | Take off the heat and add the parsley and lemon juice. Stir together, then pour over the swordfish and serve immediately |
6. | Serve with boiled new potatoes and grilled asparagus tossed in a little butter |
