Pan-fried Swordfish with a Parsley and Lemon sauce

Serves 1

Ingredients

  • 250g Fresh Swordfish
  • 1 tablespoon Olive Oil
  • 1 tablespoon Flat Leaf Parsley (finely chopped)
  • Juice of ½ Lemon
  • 15g Unsalted Butter
  • Salt and Pepper to taste

Directions

1. Heat the oil in a pan over a medium heat
2. Season the steak with salt and pepper, then place in the hot pan
3. Fry for about 4 minutes on each side, then place on a warmed plate
4. Pour away any remaining oil, then melt the butter in the pan
5. Take off the heat and add the parsley and lemon juice. Stir together, then pour over the swordfish and serve immediately
6. Serve with boiled new potatoes and grilled asparagus tossed in a little butter
