Jam Shortbread Bars
Serves | 16 |
Directions
1. | Pre-heat the oven to Gas Mark 5 / 190°C / 375°F. Grease a 9" x 13"/ 23cm x 33cm pan |
2. | Beat the butter and sugars together until pale and fluffy |
3. | Add in the salt and vanilla and combine well |
4. | hBeat in the ground almond and flour on a low speed until combined into a smooth dough |
5. | Divide the dough in half. Wrap one half in cling film and refrigerate. |
6. | Press the other half into the bottom of the pan and bake for about 20, until it is just starting to turn a light golden colour |
7. | Spoon the jam into a bowl and stir until smooth. Pour it onto the base and spread evenly |
8. | Crumble the refrigerated dough over the jam to form a topping |
9. | Bake for about 30 minutes until the top is firm, crisps and golden in colour |
10. | Cool in the tin on a cooling rack. Once fully cooled, turn out and dust with a little icing sugar before cutting into bars |
