Jam Shortbread Bars

Serves 16

Directions

1. Pre-heat the oven to Gas Mark 5 / 190°C / 375°F. Grease a 9" x 13"/ 23cm x 33cm pan
2. Beat the butter and sugars together until pale and fluffy
3. Add in the salt and vanilla and combine well
4. hBeat in the ground almond and flour on a low speed until combined into a smooth dough
5. Divide the dough in half. Wrap one half in cling film and refrigerate.
6. Press the other half into the bottom of the pan and bake for about 20, until it is just starting to turn a light golden colour
7. Spoon the jam into a bowl and stir until smooth. Pour it onto the base and spread evenly
8. Crumble the refrigerated dough over the jam to form a topping
9. Bake for about 30 minutes until the top is firm, crisps and golden in colour
10. Cool in the tin on a cooling rack. Once fully cooled, turn out and dust with a little icing sugar before cutting into bars
