Honey and Cardamom Sugar Cookies

Ingredients

  • 125g Unsalted Butter
  • 125g Caster Sugar
  • 125g Honey
  • 1 Large Free-range Egg
  • 1 teaspoon Ground Cardamom
  • 100g Self Raising Flour
  • 350g Plain Flour

Directions

1. Cream together the butter and sugar until light and fluffy
2. Mix and egg together, then add to the butter/sugar mixture a little at a time
3. Sift together the flour and ground cardamom, then add into the mixture
4. Turn the dough out into cling film and wrap tightly then chill for 2 hours
5. Preheat the oven to Gas Mark 4 / 350°F / 180°C
6. Roll the cookies out on a lightly floured surface. Place the cut-outs on a greased and lined baking tray
7. Place the tray back in the fridge for 15 minutes
8. Bake the cookies for 10-12 minutes or longer depending on their size. Bake until the edges just start to brown
9. Leave to cool on the baking tray for a few minutes then transfer to a rack to cool fully
10. Ensure your cookie is fully cooled before icing
