Corn Syrup

Ingredients

  • 450g Caster Sugar
  • 180ml Water
  • ¼ teaspoon Cream of Tartar
  • pinch Salt

Directions

1. Combine all ingredients in a thick bottomed saucepan and bring to a boil
2. Reduce heat to a simmer then cover with a lid. Brush a little water around the sides of the pan to prevent sugar crystals forming
3. Cook until it reaches soft ball stage on a sugar thermometer, stirring often
4. Cool syrup and store in airtight container at room temperature for up to 2 months
