Chocolate and Peanut Butter Brownies

Ingredients

  • 230g Unsalted Butter
  • 125g Dark Chocolate (finely chopped)
  • 125g Milk Chocolate (finely chopped)
  • 1 teaspoon Instant Coffee Powder
  • 2 teaspoons Vanilla Extract
  • 250g Light Brown Sugar
  • 3 Large Free-range Eggs
  • 100g Plain Flour
  • 40g Cocoa Powder
  • 2 Bar 48g Snickers
  • pinch Salt
  • 100g Peanut Butter (smooth)

Directions

1. Melt the butter and chocolate in a bowl over simmering water and allow to cool
2. Add a tablespoon of hot water to the teaspoon of coffee powder and stir into the melted chocolate mix. Set aside to cool
3. Preheat the oven Gas Mark 4 / 180ºC / 350ºF. Butter and flour a 9" x 9" baking pan
4. In a mixer on high speed, beat the eggs, vanilla and sugar until it is thick and creamy, about 8 minutes
5. Turn the speed to slow and pour in the cooled melted chocolate and butter, and the coffee. Mix until combined
6. In a separate bowl, sift flour and cocoa together, then toss in and coat the chopped snickers
7. Lift the bowl from the mixer and gently fold in the flour and snickers by hand with a spatula until it looks fudgy in texture, then pour into the prepared pan
8. Melt the peanut butter in the microwave just until runny, then drizzle over the brownie mixture. Swirl with a knife if necessary, ensuring not to over mix
9. Bake for 30-35 minutes until just cooked. I like mine still a little underdone and fudge, but cook a little longer if you prefer. Allow to cool completely in the pan before cutting into squares
