Chicken with Lemon Couscous and Courgettes
Serves | 2 |
Ingredients
- 2 Chicken Breasts
- 2 Courgettes
- 150g Cous cous
- 350ml Vegetable Stock
- pinch Salt
- 1 Lemon
Directions
1. | Place the chicken breasts in a freezer bag to prevent and chicken flying around kitchen. Bash with a rolling pin until its an even thickness of about 1cm and season |
2. | Chop the ends off the courgettes, and using a peeler, cut it into thin strips |
3. | Heat a grill pan and a small frying pan, each with a little oil |
4. | Place the cous cous in a bowl, and pour the hot stock over the top. Cover with a plate or lid, and leave to rehydrate |
5. | Add the chicken to the grill pan, and the courgette to the frying pan |
6. | Fry the courgette until it starts to crisp and colour, then add into the cous cous |
7. | Turn the chicken over after a few minutes and brown on the other side |
8. | Cut the lemon in half, and squeeze half over the chicken in the pan, and the other half over the cous cous. Fork through then serve |
