Basic Pasta Dough
Ingredients
- 400g '00' Flour
- ½ teaspoon Salt
- 3 Large Free-range Eggs
- 2 Free-range Egg Yolk
- 2 teaspoons Olive Oil
Directions
1. | Sift together the flour and salt into a mound on a clean work surface, making a well in the top |
2. | Beat the eggs, yolks, olive oil and pour into the well |
3. | Using your fingers, draw the flour into the well and mix to form a dough. Add a little more oil if it is still too dry. If it is too wet/sticky, add a little more flour |
4. | Kneed for 10 minutes until smooth, then wrap in cling film and chill for 30 minutes before rolling flat either with a dusted rolling pin or a pasta roller |
Note
Uncooked pasta dough freezes very well. Make a large batch of the dough, divide into portions required for a meal. Form into a ball and cover in flour, then wrap well in cling film or freezer bags
