Bacon Jam
Ingredients
- 600g Bacon
- 300g Shallots
- 1 Large Onion
- 4 cloves Garlic (minced)
- 1 teaspoon Paprika
- 120ml Bourbon
- 30ml Balsamic Vinegar
- 100g Brown Sugar
- 100g Caster Sugar
Directions
1. | Cook the bacon until crispy then set aside, leaving the bacon fat in the pan |
2. | Fry the sliced onion and shallots until caramelised. Add the garlic |
3. | Add the water to a large heavy bottomed pan, and add the sugars. Heat gently until the sugar dissolves, then turn up the heat and cook just until it starts to caramelise |
4. | Put the bacon and onion into a blender and pulse until almost smooth, then add this to the sugar and water |
5. | Add the balsamic vinegar, maple syrup and paprika, then stir well. Cook over a moderate heat until the mixture thickens then seal into jars |
