Bacon Jam

Ingredients

  • 600g Bacon
  • 300g Shallots
  • 1 Large Onion
  • 4 cloves Garlic (minced)
  • 1 teaspoon Paprika
  • 120ml Bourbon
  • 30ml Balsamic Vinegar
  • 100g Brown Sugar
  • 100g Caster Sugar

Directions

1. Cook the bacon until crispy then set aside, leaving the bacon fat in the pan
2. Fry the sliced onion and shallots until caramelised. Add the garlic
3. Add the water to a large heavy bottomed pan, and add the sugars. Heat gently until the sugar dissolves, then turn up the heat and cook just until it starts to caramelise
4. Put the bacon and onion into a blender and pulse until almost smooth, then add this to the sugar and water
5. Add the balsamic vinegar, maple syrup and paprika, then stir well. Cook over a moderate heat until the mixture thickens then seal into jars
