Hasselback Potatoes

Ingredients

  • 450g New Potatoes
  • 40g Unsalted Butter
  • Salt and Pepper to taste
  • 2 heaped tablespoons Finely Grated Pecorino Romano Cheese

Directions

1. Preheat the oven to Gas Mark 7 / 220°C / 425°F
2. Using a sharp knife, thinly slice the potatoes but not all the way through
3. Place them on a baking tray cut side up and brush with the melted butter and season with salt and pepper
4. Bake for 35 minutes, then sprinkle with the cheese and a little more salt, then return to the oven for an additional 20 minutes until golden brown and crisp

Note

A great alternative to salt is Lawry's Seasoned Salt if you can get it.
