Bacon and Tomato Salsa with an Avocado Cream

Here is a relatively easy salsa to accompany whatever dish you like. It is a simple salsa that is easy to customise, and an avocado cream dip that cries out for nachos or tortilla chips. I served it with some Spicy Sweetcorn Fritters (come back this Saturday for the recipe).

I made it with coriander, but it would work just as well with rocket, or any green leaf you want really. I didn’t puree the avocado too much as I like a little texture in mine. If you want to add a little heat to this, you could add in half a deseeded and finely sliced chilli pepper.

Bacon and Tomato Salsa with Avocado Cream

Ingredients

Avocado Cream

  • 2 Ripe Avocado
  • 1 juice large Lime
  • ½ teaspoon Garlic Salt
  • 2 tablespoons Soured Cream

Salsa

  • 1 Small Red Onion
  • 60g Fresh Corriander (or rocket)
  • 250g Cherry Tomato
  • 4 Rashers Smoked Streaky Bacon

Directions

1. Remove the flesh of the avocado and place into a blender or food processor. Squeeze in the juice of the lime, and the garlic
2. Pulse to a smooth puree and then add two tablespoons of sour cream. Taste and season with salt and pepper or a little more lime juice. Cover and refrigerate until needed
3. Fry the bacon in a pan with a little oil. Once crisp, remove and drain on kitchen paper
4. Finely chop the onion, and halve the tomatoes. Place together in a large bowl
5. Add in some roughly chopped fresh coriander or rocket. Crumble in the bacon, then stir together. Cover and refrigerate until required or serve immediately with the avocado cream on the side
