Buttermilk Waffles and Pancake Make-ahead Mix

Week day breakfasts are usually done on the run, a cereal bar or something easily slipped into the lunch bag to gnaw on when we get to work. However, at the weekends when we have more time, we like to take things at a more leisurely pace here at Chez Mutherfudger.

A favourite is pancakes, however, after a trip to USA last year, I knew I needed to own a waffle iron. There is nothing more satisfying than a fluffy waffle dripping with maple syrup. The waffle iron I bought came with a bag of mix that I just had to add milk and butter too. When that ran out, I looked online at the cost of replacement mix, and it seemed ridiculously high. I figured the best thing was to go ahead and make my own.

This mix has a little wholemeal flour which I find gives the waffles and pancakes a little more body. If you don’t like it, you can replace it with more plain flour.

Buttermilk Waffles and Pancake Mix

Ingredients

  • 35g Baking Powder
  • 130g Powdered Buttermilk
  • 80g Icing Sugar
  • 20g Bicaronate of Soda
  • 1 teaspoon Salt
  • 150g Wholemeal Flour
  • 750g Plain Flour

Directions

Mix
1. Sift all the items together into a large bowl. Pass through the sieve again to ensure that the mix is fully blended
Waffles
2. Melt 25g of butter and allow to cool
3. Put 170g of mix in a bowl
4. Light beat 1 free range egg with 150ml of milk
5. Add the butter, milk and egg to the dry mix and stir with a whisk until mixed to a smooth batter
6. Bake in your waffle iron as per manufacturer's instructions then serve (Makes 2 waffles)
Pancakes
7. Put 340g of mix in a bowl
8. Measure 200ml of milk and 150ml water then whisk in 1 large egg, Add 30ml of vegetable oil
9. Pour wet ingredients over dry, and mix gently with a whisk until no lumps remain
10. Ladle the mixture into a non-stick pan over a low heat. Cook until the top is full of bubbles and starting to look less shiny, then flip. (Makes 12-14 pancakes)
