Christmas Cake Chocolate Bark

The final inclusion in this year’s edible Christmas gift hamper is Christmas Cake Chocolate Bark.

Chocolate bark is very simple and versatile gift for any occasion. You really are only limited by your imagination. I try to include some chocolate bark each year, but with a seasonal twist. It is easy to make, which makes up for some of the other more fiddly and time-consuming items.

Christmas Cake Chocolate Bark

Ingredients

  • 500g Good Quality Milk Chocolate
  • 4 teaspoons Mixed Spice
  • 300g Dried Mixed Fruit & Peel
  • 100g Dried Cherries
  • 150g Marzipan (Almond Paste)
  • 10 Mini Meringues (broken up)

Directions

1. Line a large baking sheet, at least 2cm deep, with a layer of cling film
2. Break the chocolate into squares, and melt gently in a glass dish over a pan of simmering water
3. Once the chocolate is smooth and velvety, take off the heat and stir in the spices
4. Stir in the dried fruit and pour the mixture into the baking tray
5. Scatter the pieces of the marzipan and meringue on top
6. Allow the chocolate to set at room temperature. Once set, chill for a few hours before breaking into shards and putting in gift bags
