Tarragon and Lemon Turkey Burger

Turkey mince can be used in just about every recipe that you would use beef mince. The beauty of turkey is that it is far cheaper, and much lighter in texture and calories. Its fair to say it may not be quite as tasty, due to its leaner nature, but if you can get hold of thigh mince rather than breast, that will help. The addition of herbs and lemon give it a freshness and lightness that makes it great for cooking on the barbecue or indoors.

Rather than the usual cheese, serve this burger with some crunchy lettuce, juicy tomato and on the side a few crisp potato wedges.
