BBQ Beef Burgers with Candied Bacon and Crispy Onion
Inspired by the Wicked Good Burger book I reviewed this weekend, I decided to rustle up burgers for dinner.
I didn’t follow one of the recipes from the book, but made my own. I took some lean minced beef, and added some of 14 Spice Dry Rub as flavouring. I accompanied that with some candied bacon, crispy fried onions and couple of sliced pickles. All this was topped off with some cheese – cheddar or brie works really well – and a good squirt of my Sweet and Tangy BBQ Sauce.
I cooked the burger in a skillet but it could just as easy be done on a barbecue.

BBQ Beef Burger with Candied Bacon and Crispy Onions
Ingredients
Burger
- 500g Lean Steak Mince
- 2 tablespoons 14 Spice Dry Rub
- 1 teaspoon Salt
Crispy Onion
- 2 Large Onions (half moon slices, as thin as possible)
- 1 handful Fine Cornmeal
- 1 handful Plain Flour
- 1 heaped tablespoon 14 Spice Dry Rub
Candied Bacon
- 8 Rashers Smoked Streaky Bacon
- 1 heaped tablespoon Dark Brown Sugar
- 1 teaspoon Sweet Paprika
- Maple Syrup
Directions
1. | Place the slices of bacon on your grill pan with the base lined in foil. Mix the paprika and sugar together and rub gently on top of the bacon |
2. | Bake the bacon in a pre-heated oven Gas Mark 4 / 180°C / 350°F for 10 minutes. Brush the bacon with some maple syrup and place back in the oven for 15-20 minutes until crispy |
3. | Knead the spice mix and salt into the minced beef, and divide into 4. Shape each quarter into a patty about 1.5-2 cm thick. |
4. | Heat a cast-iron skillet with a little oil until the oil just starts to smoke. Gently place your burgers in the pan and leave undisturbed until they are ready to turn. |
5. | Flip the burgers and cook the other side until cooked through. Take the skillet off the heat, place a slice of cheese over each patty, and leave the burgers to rest for 10 minutes |
6. | Heat some vegetable in oil in a wok about 3-4cm deep. While your oil is heating, toss the onion slices in the flour, cornmeal and spice mix until completely coated |
7. | Drop into the hot oil, a good handful at a time, and fry until it starts to turn golden. Lift out each batch with a slotted spoon or spider and drain on a plate with kitchen paper |
8. | Serve the burgers in a bun, with 2 slices of bacon, and a handful of crispy onion. |
