Chicken Carbonara Pizza

My husband came to me the other day saying that someone had mentioned they had Carbonara Pizza and that it was awesome. I was intrigued.

He then mentioned they bought it from a supermarket which we don’t have near by. Darn. That’s ok, I told him. I will make one. Surely it’s just a carbonara sauce on a pizza instead of the usual tomato, right?

I made the sauce pretty thick, and added a little cream for the richness you usually get with a carbonara sauce. I don’t know how the resulting pizza compares with the supermarket version, but it as delicious and I shall definitely be making it again.

Chicken Carbonara Pizza

Serves 2-4

Ingredients

  • 1 portion of Basic Pizza Dough (see below)
  • 200g Chicken Breast
  • 8 Slices Streaky Bacon
  • 30g Unsalted Butter
  • 1 Medium Onion (thinly sliced)
  • 2 cloves Garlic (crushed)
  • 30g Plain Flour
  • 100ml Double Cream
  • 240ml Milk
  • 50g Grated Parmesan
  • Ground Black Pepper
  • 250g Mature Cheddar (grated)

Directions

1. Make one batch of Basic Pizza Dough (makes two 10 inch bases)
2. Add the chicken and bacon to a saute pan, and fry until cooked, and the bacon is starting to crisp. Remove with a slotted spoon, leaving the bacon grease, and place on some kitchen paper to cool and drain
3. Melt the butter in a saute pan and add the sliced onion. Cook over a low heat until the onion is soft then add the garlic and cook for a further 2 minutes
4. Sprinkle in the flour and cook for another couple of minutes
5. Add in the cream and milk a bit at a time,stirring gently to remove any lumps of flour between each addition. Cook until desired thickness is achieved. You want a fairly thick sauce
6. Take it off the heat and stir in the parmesan, then season with a little ground black pepper. Cover the pan with a lid and put to one side.
7. Pre-heat the oven to 220°C / 425°F / Gas Mark 7
8. On a well floured surface, press the pizza base dough out into two 10" circles
9. Top each with half of the carbonara sauce, then half of the grated cheddar
10. Sprinkle the bacon and chicken evenly, then sprinkle the remaining cheese
11. Place the pizzas as near the top of the oven as possible. Then turn down to 200°C / 400°F / Gas Mark 6
12. Bake for 10 minutes, then swap the pizzas around. Bake for a further 5-10 minutes or until the cheese and sauce is browned and bubbling
13. Spread the chicken evenly over the pizzas then sprinkle the final third of cheese. Top with some mixed herbs
14. Place back in the oven for a further 10-15 minutes depending how well done you like it, then serve
